Clean Eating Dinner Recipes: Penne with Zucchini and Ricotta from Active Harmony

CLICK HERE for their recipe.  If ricotta is out of your budget, cottage cheese is an affordable, clean option to stretch your dollar.  I also recommend using whole grain pasta over white noodles to pump up the nutritional value of the dish.  Quinoa noodles are also a great alternative if you need to make the dish gluten free.
